I’m not that much of a manpower man. As much as I like to think I could take the spice, I’m more of a chicken tikka masala man. Or anything creamy and soft. Yes, still into cooking things with fire. I read/watched/heard/ate once(and then forgot about) smoked mash. For some reason it’s in my head as being all the rage. Chicken in Hay

It’s all the blinking rage cooking things in hay. I had some left over from the heston fish pie so thought I’d have a go. This is basically a rip off of the epic Tom Kerridge’s dish. Chicken Galantine

Every now and then it is time to try something a bit pretentious that will no doubt fail. I’m having another attempt at a chicken galantine, basically stuffing a smashed chicken breast with a mousse of itself, sous vided and then quickly fried in butter. Chicken Tikka Masala

This is a quick version of last years Heston’s Chicken Tikka Masala. It really is worth the effort of roasting the spices, sieving the sauce and separately cooking the chicken (bbq if you can).

Coq au vin Ramble Moment

Salt Baked Chicken

I’m a big fan of doing odd things to chicken. Fans of badly written blog posts may like to read previous postings about malibu smoked chicken and beer can chicken Tonight it is salt baked chicken. This was very impromptu. There is something boring about a standard bbq, there needs to be a project item. Todays project item was an attempt at Malibu smoked chicken. Heston’s Roast Chicken

Many tell the tale of Heston’s Roast Chicken. A chicken needing two good days of fiddling. Results do seem to vary. I need molton cheese. Something from a pig and Some format of crispy chicken. I adore chicken kievs and chicken cordon bleu.
